Vegetables

Vegetables are a wonder and a pain. And on a note – I have chosen to add “vegetables” as a category as I might not have included the vegetable that you have on hand separately in the list of ingredients. There are simply too many. However, I know that families often fight with the children over vegetables. Everyone wants their children to eat vegetables as they are healthy and full of vitamins – but although tasty, they seem to be a headache. You end up buying them with the intention of using them, however many often end up letting them sit there in the fridge until “old”. Also, you are often forced to buy more vegetables than you use in a recipe as they come in bulk and end up with stocking up vegetables that end up in the bin instead of on the table. However – they are amazing in the sense that they can be used in many states of condition. When fresh – eat them fresh in salads, stirfries, snacks and other dishes. When going slightly old, use them in a stew, soup or quiche. In fact – they are great!! They are super versatile. Squash, carrots, apples, bananas (which essentially are fruits..I know) can be used in cakes and muffins. Freeze them and let them wait for a day you need to cook up a snack.

When having a left over – use them for quiches, tortillas, soups, mashes, – there are no limits.
