What better way to use rice than as a base in a salad? I often cook rice and too much of it too. It is easy to use the left over rice the following day by mixing in some greens and adding a dressing. This is also ideal for the lunch box as it need no heating!
An example of rice salad is:
Left over rice added
- 1 – 1 1/2 cup cold cooked rice (basically whatever you have left)
- 1 cup of edamame beans (can be purchased frozen..no heating needed)
- 2 avocadoes
- 1 block of feta cheese
- 10-15 finely choppede radishes (I had some in the fridge left over from another meal cooked the other day)
- 1/2 red onion finely diced
- juice from 1/2 lemon, 1/2 cup of olive oil, 1/2 tsp. cumin, 1 clove of garlic finely chopped, salt and pepper
But really – you can use anything you like, spring onions finely chopped, tomatoes, cucumbers, finely chopped capsicum, broccoli, cauliflower…
