Soups

Soups are one of my favorites!! The whole family loves soups – and with a freshly baked bread as a side – it hardly gets any better.

Occasionally, I will do a proper soup like a broccoli soup, onion soup, cauliflower soup, aspargus, pumpkin, tomatoes or the like. However, very often I end up doing a soup based on left overs. Maybe I have some vegetables that have been sitting in the fridge for too long. Adding them all together in a pot making a soup gives these vegetables new life.

Sometimes I will actually collect “scraps” for a few days, and add them all in a soup. I will keep the odd beans or mixed vegetable stir fries that were left behind the day before in a zip lock together with the stem of a cauliflower or broccoli. Perhaps there might even be a fresh chili that has gone a bit soft which can be used as spice in the soup. Add this together with the remainder of the vegetables you bought for another meal, but where you ended up not cooking it all and now have a left over which really can’t be used in other recipes.

Soups are excellent for cleaning out your fridge, for maximizing the use of your produce and will give you that boost of vitamins you might be looking for!
