Pear rocket (arugula) salad
I love pears! We all love pears! But they are at their best when they are still a bit hard and crispy although the softer they get, the more sweet they turn. We had a left over pear in the fruit basket the other night that had turned the point of ripeness for it to be left behind. Added to a salad – it worked wonders!
Ingredients
75 g rucola salad
75 g crumbled feta cheese
1/2 finely sliced (not pealed) large pear …or a whole smaller type of pear
1 diced avocado
1 handful dried creanberries
75 g (or a good handful) dry roasted chopped almonds
Sauce
1 tsp whole grain mustard
1 tbsp honney
2 tbsp white wine vinegar
50 ml olive oil
Method
Rinse the rocket salad. Rinse the pear, leave the skin on, core, and slice finely. Peel the avocado and dice. Crumble the feta cheese. Roast the almonds until slightly darkened and chop. You really do not need to roast them however, it does bring out a nice flavor if you do and they do become slightly more crunchy. Add it all to a nice salad bowl.
In a separate bowl, whisk the ingredients for the sauce – all at once – until the ingredients come together and form a “thicker” sauce.
Add the sauce to the salad and mix the ingredients carefully as to avoid breaking the slices of pear.
