Oven baked chicken with crushed cornflakes
How many kilo’s of crumbs do you throw out when having a family who eats cornflakes for breakfast? When a bag is empty it is never completely emptied at our house. The last bit is always left behind as it is no longer crisp when milk is added. Instead of throwing out the crumbs, I collect them in a separate bag and use them for covering chicken filets to make wonderful crunchy oven baked chicken.
Ingredients:
90 g crushed cornflakes (left over crumbs really)
100 g flour
1 tsp paprika
1 tsp salt
1/2 tsp pepper
2 eggs
600 g chicken filets (or breasts sliced in thinner strips)
Method:
Pre heat the oven to 190 degrees celcius.
Mix the flour and spices and add to a plate, other flat dish or a bag.
Wisk the eggs
Add the cornflakes into a bowl or a plate
Dip the chicken in flour or shake them in a bag with the flour. Dip each slice of chicken in egg and turn it in cornflakes. Place the chicken onto a baking tray lined with a piece of baking paper. No extra grease is needed!
Bake for approximately 25 minutes turning once midway.

Tastes delicious with fries and a salad.
