I hate wasting food… and tonight we had steamed fish (steamed with a bit of wine, lemon and cream) together with rice. A bit was left - maybe 3/4 cup of rice and 50 g fish … really not quite sure. I decided to blend it all up, added a couple of eggs, 1/2 carrot, two spring onions, 1/4 tsp curry and a few sprigs of fresh Italian parsley…. Thinking I might have had to add a bit of flour as well. This was not necessary as the rice did the trick. Fried them on a pan with canola oil - and voila - the most delicious fish patties ready for the lunch box or tomorrow night for dinner 🍽️🥳

A Little bit of a mix match … had a bit of asparagus forgotten and left behind, frozen peas, a few edamame beans, a bit of kale (4 leaves to be exact), two de-boned chicken thighs, garlic - added with cream and cream cheese - ended up being a great pasta sauce!! If you have tomatoes and/or zucchini or eggplant which are no longer at their best - cook them, - and they are as good as if you had used new and fresh ones. Here with a handful of basil, mozzarella, garlic and olive oil. You can cook them in the o en or even on the BBQ. Check out the recipe on foodential.com

Great way to combine yesterday’s leftovers - in this case a roasted chicken and a pasta with blue cheese (Gorgonzola) sauce. Check out foodential.com for the recipe.

Following a bug event we had tins of tomato sale left over (mixed with aubergine and squash). Instead of throwing it out, I did tomato/vegetable soup but as it turned a bit coarse, I sieved it and kept the pulp. Today I took 400 ml pulp, added a few cloves of garlic, 1 large tbsp tomato paste and a large tbsp oregano and cooked it up turning the whole thing into a delicious pizza sauce!! Really nice!!

Croquettes (Potatoes mixed with a left over vegetable mash/pulp).The other day I cooked up a great soup based on a variety of vegetables hiding in the fridge… a stalk of broccoli, a carrot, a bit of fennel, mushrooms, garlic, onion, chili etc. As it was all a bit coarse, I chose to sieve it and had about 300 grams of mashed vegetables (pulp) left over. Instead of throwing it out I kept it for today where I mixed it with 1/2 kg mashed potatoes, eggs, flour, bread crumbs and a few spices - shaped some tablespoon sized balls or lumps, turned them over in bread crumps and deep fried them. They turned into these delicious croquettes that could easily do as a side or snack - as they were or dipped in a chili/Mayo or a sweet and sour chili sauce. They were delicious!!
