Left over chicken, onion and red capsicum tortillas
This is an example of what you can use left over chicken for. Delicious tortillas – also great for a school lunch. However, you could also very easily just make a vegetarian tortilla omitting the chicken and adding more onion and capsicum. This too is delicious!
Ingredients
approximately 300 g. peeled chicken
1 finely sliced onion (I mixed 1/2 white with 1/2 red as I had this on hand)
1 finely sliced red, yellow or mixed capsicum. Does not need to be fresh and crisp, as it is cooked.
1 small finely chopped chili
1 tbsp oil
Guacamole:
2 ripe avocados
1 good handful fresh cilantro
2 cloves garlic, minced
1 dash of nutmeg
1/2 lemon freshly squeezed
salt and pepper to taste
Topping:
sliced lettuce
chopped tomatoes
1/2 diced cucumber
1/2 diced green capsicum (optional)
sour cream
grated cheese (I often mix mozzerella, emmenthal and red cheddar)

Method:
Peel the chicken, slice the capsicum and onion. Add oil to a pan – when hot, add the onions and capsicum and stir fry until lightly golden. Add the chicken, fry along for 5 minutes – or until hot – while mixing together with the onion and capsicum. Just before serving, – you can quickly re-heat it!
Prepare the guacamole. In a chopper, chop 1 1/2 avocado finely adding the roughly chopped celantro and minced garlic. Add the lemon juice of 1/2 lemon, a dash of ground nutmeg and salt and pepper. The consistency should be fairly smooth. Now chop the remaining 1/2 avocado and mix this in the mashed/processed guacamole by hand in order to add a bit of texture.
Slice the lettuce and serve as a side in a separate bowl. Add the grated cheese to another bowl. Add sour cream to a third bowl.
Chop the tomatoes, cucumber and optionally 1/2 green capsicum and mix adding a bit of salt to taste. Serve in a separate bowl.
Heat the tortillas and serve. Allow everyone to assemble their tortillas as they wish.
Instead of guacamole, you could also just add a few sprigs of fresh cilantro. And to spice it up a bit, you could add a few jalapenos.
