Edamame Bean Salad

This is so easy! I often have a bag of edamame beans in the freezer ready for use – all you have to do is to take it out, defrost it, mix it up with a few ingredients and you have a wonderful green side to serve.

Ingredients:

  • 1 bag of defrosted edamame beans
  • 1 small finely sliced red onion
  • 1 finely slice spring onion
  • 75 grams of crumbled feta cheese

Sauce:

1/3 squeezed lemon juice

1 clove minced garlic

1/2 tsp cumin

1 dl olive oil

salt and pepper to taste

Mix well

Method:

Defrost the edamame beans, slice the onions, crumble the feta cheese, mix the sauce and add it to the salad. That is it! Really easy and super tasty!
