Chocolate Nut Caramel Chunks

I actually don’t know what to call these, but they do end up as chunks. The first time I made these, was when my 14 year old daughter had to go hiking and camping as part of a school project. My daughter had agreed to bring nuts for the trip but looking at the weather forecast being the worst for months – it was rainy, windy, freezing cold – not great weather for ANY out door activity, I decided to add a little something to the nuts, she had to bring for snacks.

You can mix and match any nuts – og just simply go with one type – I decided to do the following which definitely worked!

  • 50 grams butter
  • 200 g sugar
  • 70 ml honey
  • 240 g dark chocolate (I use chocolate made of 70% cocoa for this) but anything goes)
  • 400 g nuts (I did 200 g of peanuts mixed with 200 g of mixed cashews, pistachios, hazel nuts, almonds and pecans as I emptied my stock)
  • A bit of Sea salt (optional)

Line a shallow dish (I used a 24 cm pie tray) with baking paper. Melt the sugar, butter and honey in a pan until the sugar is no longer crystalized and until the mixture bubbles. Add the nuts and be sure to cover them all. Poor the nuts into the shallow dish, spread out evenly and let them cool off.

Gently melt the chocolate. When the nuts have cooled off completely, pour over the chocolate, sprinkle with a bit of sea salt (optional) and let it set/harden. Put it in the fridge over night.

And it is ready to be broken into chunks.
