Chicken Salad

What do you do when you have scraps of a whole chicken? Well – the scraps don’t make a whole meal on their own, – but peeled it adds to a nice chicken salad. I do several – but here is one based on cucumber, flat leaved parsley (Italian parsley), tomatoes…and more. Actually, it tastes even better with lamb…but chicken was what I had.

Ingredients:

Peeled Chicken abt 300 g.

2 cups of Italian parsley

2 spring onions

15 cherry tomatoes

1 cucumber

3 finely sliced radishes (optional)

Sauce

5 tbsp olive oil

2 tsp coarse mustard

1 tbsp honey

a pinch of salt

Method: 

Peel the chicken. Rinse the parsley and chop very coarsly. Rinse the cucumber, tomatoes and spring onion. Cut the tomatoes in half. Cut the cucumber in quarters and then slice diagonally. Cut the spring onion diagonally. Rinse and finely slice the radishes. Add the sauce and mix well.

Sauce: Mix the ingredients and whisk until creamy.
