Bananas

Bananas….some like them ripe, some like them green…I am sort of in between. When I buy them, I usually buy them green so they last longer in the fruit bowl, but often I have one or two left which keep on being left behind in the fruit bowl. They ripen more and more as suddenly they are overdue and nobody picks them as a snack. However, instead of throwing them away I either freeze them – and not to scare you…they turn completely black …or I use them for banana bread, cake or muffins straight awas. If they end up in the freezer – and go black – don’t worry. When they are defrosted – peel them (they are more or less a mash when you do) and add them to a cake. The more ripe they are, the tastier they are in cakes as they turn sweet. Don’t get turned away by color or texture.
