In my point of view – an overlooked vegetable. You can use it as a root mixed with other roots like beets, potatoes, carrots, parnips and more in an oven roasted dish, raw – diced or grated in salads, cooked and mashed with potatoes, finely sliced and deep fried for chips…and soups. My point is – you can mix up a great salad with fresh greens as long as the sauce is good. This time I had a bit of celery, capsicum peppers, cucumber, a few spring onions, feta cheese, rocket salad and olives. But many combinations work.
Ingredients
2 stalks of celery
1 red capsicum
1/2 cucumber
2 spring onions
1 small “baby” rocket salad
1 handful green olives (could be any colour)
75 g crumbled feta cheese
Had I had an avocado, I would have used that as well.
Ingredients sauce
1/2 cup olive oil
1 tbsp dried oregano
1/4 tsp dijon mustard
2 tbsp white wine vinegar
Method
Rinse the greens. Slice the celery diagonally. Dice the cucumbers. Slice the red capsicum into thin long slices. Slice the spring onion. Crumble the feta cheese. Peel and dice the avocado…if you have one. Finely slice the rocket salad.
Add it all to a bowl and mix.
Whisk the ingredients of the sauce and pour on top of the salad. Mix and you are done!!

Honestly, I was never a big fan of zucchini. I find it a bit bland and there are so many other vegetables which have more taste – so why zucchini? Well – I have had to revise my stand a bit. When my daughter decided to grow a few Zucchini plants in the garden …we were about to drown in Zucchinis. So I had to come up with uses for this otherwise overlooked vegetable. And I must admit – it taught me a thing or two. As the zucchinis grew into our lives, we grew into loving zucchinis. I have made pancakes, cakes, bread, stews, filled zucchinis and more. Many times with chopped tomatoes, basil, garlic and a bit of red onion. It is absolutely delicious. And it is ok, if it has turned a bit soft as I always cook it in some form. If they are super fresh and crisp, they can be eaten raw and used as cucumbers. They are in fact very tasty!
