There is almost a bit of extra meat on a chicken that will be left over when roasting or bbq’ing a whole chicken. Peel it and chop it – mix it with mayo and create a wonderful filling for sandwiches or wraps for the following

I bet most households eat cornflakes for breakfast – maybe not everyday – but once in a while. And when a bag is nearly finished, most throw out the crumbs as they get all soggy when adding milk. However, instead of throwing them out –

Again – don’t throw out your crumbs!!! They can be used as a crisp topping for cookies. Collect your crumbs when finishing a bag. The last bit is hardly ever eaten as the crumbs turn all soggy when adding milk. But they are wonderful used as a topping.

Ingredients:

125 g soft butter

75 g sugar

90 g chocolate chips or chopped dark chocolate

150 g flour

1/2 tsp salt

1/4 tsp baking soda

1 tsp baking powder

50 g cornflake crumbs (or crushed cornflakes)

Method:

Pre-heat the oven to 185 degrees C.

With a hand held mixer, mix the soft butter and the sugar until soft and smooth. Add the egg and mix well. Sift the flower, salt, baking powder and baking soda and mix it in with the butter, egg and sugar until creamy and smooth. Add the chocolate and mix.

With two spoons, shape a cookie ball. Turn it into the cornflake crumbs covering the cookie ball and flatten it a bit.

Place the cookies on a baking tray lined with baking paper.

Bake in the centre of the oven for about 18 minutes. Let them cool on a rack.
